Whoops!

Eating, consuming, devouring, snacking, nibbling, munching, gobbling all day long. 
Flourishing, growing, maturing, sprouting, running, thriving, living each day.

That is what a day is like in the life of a young man.  I happen to have 3 of them.  The end of the winter they went through a stretch where they didn't eat much.  Then spring came and oh how happy I am that it did while that also means kids play outside more. They run, they jump, they go here and there.  That means their bodies require more fuel.  Fuel that has to be cooked.  Which is really a paradox.  I want to be outside but I am forced to be in the kitchen more. 

After weeding a row and getting some cilantro seeds planted I dutifully made my way back inside.  I made a batch of Larabars, loaf of banana bread, 12 hamburger patties and my whoops!

I had 2 zucchini in the refrigerator getting limp so I decided to make a loaf of bread with that as well.  I have a great recipe and I make it in a bundt pan instead of a loaf pan.  I like it that way better because it has more crust area and it is prettier.  I start making the batter and ask my husband to peel and grate the zucchini for me.  As I pick up the pile I noticed it was watery and the color was just off a bit.  I even noticed a smell.  Then comes the question, "honey what are you doing with those cucumbers?"  "Huh?  What do you mean?"I ask.  He said, "that cucumber I just grated. "

I had already mixed it all in so I just scooped it into the already prepared waiting pan.  I cooked it as usual and you know what?  It is great!  Moist and tastes much like zucchini bread.  I decided to google it and there happens to be many cucumber bread recipes!  Who knew?

Here is my zucchini bread recipe.  You can choose to substitute cucumber if you wish.

 

Zucchini Bread
Grease and flour bundt pan while preheating to 350.
In a large bowl whisk together:
3 c flour
2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Make a well and add:
2 c sugar
1 c oil or butter
3 eggs
2 tsp vanilla
Mix until combined.  Add:
2 large zucchini, shredded
1 c chopped nuts (optional)
Spoon into pan and bake about 1 hour until a toothpick comes out clean.
