We love Larabars.
But there are 5 of us, 3 being hungry young men.That means if we all get 1 @ $1.50 each I will have to fork over this much bacon $7.50. For a snack! One snack each!
Do you know how many 1 young man can eat at one time? Two easy if given the choice. I have seen many recipes for Larabars on the Internet. I came up with my own based on the flavors we like and what I had on hand.
1 cup of dates (at room temperature is important if you keep them in the refrigerator)
1 cup of almonds (not shown above)
1/2 cup of peanut butter
1/3 cup mini chocolate chips
In a food processor chop the almonds and dates. When chopped coarsely add the peanut butter so everything stays together. Some recipes did not add this. I think it is a must.
Add in the chips and pulse. I used a Pampered Chef brownie pan and divided this mixture to make 12 portions. Looks good huh?
Pretty but not practical after they came out of the pan. Plan B.
I took them out and folded them over and sort of rolled them in my hand to make a log.
I sandwiched them between paper and put them in the refrigerator.
Are they good? Well my son said they needed a bit more chocolate and I must oblige him.
