Lunch Menu Planning

lunch 
  1. midday meal: a meal eaten in the middle of the day, especially a light meal that is not the main meal of the day
  2. food eaten at midday: the food prepared and eaten at the midday meal


Let's play a game!  Who's in?  I'll spin first...sushi.  No luck I have nothing to make it with.  Okay so you go...vending machine!  No? 

Okay so sometimes it can feel like a spin of the wheel as to what is for lunch.  Either you eat what ever is around which if you didn't plan for it is nothing.  It takes planning or a well stocked pantry which in either case required planning so there.

 
 
Wanting to take every advantage of the summer I have gone on a planning spree.  As previously mentioned, I started with breakfast now lunch.  That way I can also shop effectively.  I planned 7 breakfasts that can be changed when needed so I also have planned 7 lunches.  Do not be so rigid that if things come up you can't break away.  If nothing else you have planned, shopped and are now stocked for another day.  So here is what I have come up with.  I only share as a way to inspire, you do what is best for your family and situation.
 
Saturday ~ peanut butter & jelly, fruit
Sunday ~ crock pot lunch with a light dinner
Monday ~ hamburger, trail mix
Tuesday ~ wrap, muffin, fruit
Wednesday ~ pasta salad, chips & salsa
Thursday ~ beans & rice
Friday ~ egg salad, pear & cheese
 
Date Muffins
1 cup strong coffee
5 ounces pitted dates
1 1/2 cups all-purpose flour
1 cup whole-wheat flour
1/2 teaspoon salt
1 tablespoon baking soda
2 large eggs, room temperature
1/4 cup honey
1/2 cup granulated sugar
1/2 cup oil
1 1/2 cups whole milk
1/2 cup chopped walnuts, optional
  1. Preheat oven to 400 degrees. Line two 12-cup muffin tins with paper liners.
  2. Bring coffee to simmer in small saucepan. Add dates, remove from heat, and cool to room temperature. Drain and chop dates. Reserve liquid for another use.
  3. In a large bowl, whisk together flours, salt, and baking soda. In a separate bowl, whisk together eggs, honey, sugar, oil, and milk.
  4. Whisk wet ingredients into dry ingredients. Fold in dates and walnuts. Fill muffin cups three-quarters full.
  5. Bake 20 minutes, or until golden brown and toothpick inserted into center of muffin comes out clean.
  6. Cool 5 minutes in pan before removing.

  2. I love your meal ideas! Do you have any picky eaters in your family? I have a really picky eater so I am always looking for new recipes.

    1. Delora I thankfully do not have any picky eaters! And I am not sure ow that happened! I am thankful they all love to eat most things that I make. Ask them and make your plan by what they like to eat. I am so glad you stopped by and left a comment.
